APPLE - NUT COFFEE CAKE 
1/2 cup shortening
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
2 cups apple, finely chopped
1/2 cup chopped nuts
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
2 tablespoons butter, melted

In a mixing bowl cream together shortening and sugar. Add eggs and vanilla; beat well. Stir thoroughly flour, 1 baking powder, baking soda and salt; add to creamed mixture alternately with sour cream. Fold in chopped apple. Spread batter in a 13 x 9 x 2 inch pan.

Combine chopped nuts, brown sugar and ground cinnamon; stir in melted butter. Sprinkle mixture evenly over batter. Bake at 350 degrees for 35-40 minutes.
