GRATED POTATO PANCAKES 
6 med. size potatoes
1 onion
2 eggs
1/2 c. flour
1 tsp. salt

Grate potatoes and onions, let set with the 1 teaspoon of salt. Squeeze all juice out, add flour and eggs, and drop by tablespoon in hot vegetable shortening. Deep fry until golden brown. Drain.
