HOT CHICKEN SALAD 
2 c. cooked chicken, turkey or tuna
1 onion, chopped
1/2 c. green pepper, chopped
2 to 3 stalks celery, chopped
1 can mushrooms, drained
1 can bamboo shoots, drained
1 can sliced water chestnuts
1 can mushroom soup
1 c. mayonnaise
2 c. cooked rice

Season to taste. Mix all ingredients together. Bake at 350 degrees for 45 minutes. Serves 8.
