HOT ALASKA SALMON (OR TUNA) MELTS | |
1 (15 1/2 oz.) can salmon 1/3 c. mayonnaise 2 tbsp. each minced parsley, onion and celery 2 tbsp. drained chopped pimiento 2 tsp. lemon juice Dash pepper 3/4 c. shredded Cheddar cheese 3 or 4 English muffins, split Drain salmon, break into large chunks. Add mayonnaise, parsley, onion and celery, pimiento, lemon juice and pepper, toss gently, to mix. Fold in 1/2 cup cheese. Spread about 1/4 cup mixture on each slide of muffin. Sprinkle remaining cheese over salmon mixture. Broil about 6 inches from heat 3 to 4 minutes or until cheese melts and top are is golden. |
