CUCUMBER RIBBON SALAD 
1 lg. cucumber
1 carrot
1 green pepper
1 red onion

DRESSING:

2 tbsp. white vinegar
1 c. chopped dill
1/8 tsp. ground white pepper

Slice cucumber lengthwise into paper-thin slices. Place in bowl of ice water. When ready to serve drain cucumbers and put in bottom of glass bowl. Grate carrot on top. Chop green pepper and layer on top of carrot. Add layer of sliced red onion. Mix dressing ingredients and pour over salad. Toss to coat.
