HAM AND ASPARAGUS ROLLS | |
1 slice (4 to 5 inch diameter or square) ham 3 to 5 spears asparagus Hollandaise sauce (Above amounts are for one person.) Slice ham 1/4 inch or less thick, cook asparagus spears until tender. Place asparagus spears in ham slice and roll up; fasten with toothpicks. Cover with Hollandaise sauce. Heat in oven at 325 degrees until hot, approximately 1/2 hour. Serve. May sprinkle with paprika. These are excellent, made ahead and frozen. May be heated in microwave. ARLOA'S HOLLANDAISE SAUCE: (for 1 cup sauce): 1 tbsp. butter 1 tbsp. flour 1/4 tsp. salt 1/8 tsp. pepper 1/4 tsp. dry mustard 1 c. milk 1/2 c. grated Cheddar cheese 2 eggs Melt butter in saucepan over low heat. Blend in flour, salt, pepper and mustard. Stir in milk slowly and bring to a boil, stirring constantly. Cook one minute. Remove from heat. Beat eggs, slowly add 1/2 cup of hot mixture to eggs one tablespoon at a time. Return egg mixture to hot mixture, beat. Return to heat, cook one minute. Add grated cheese and mix to blend. |
