CHICKEN BREASTS DIJON 
4 boneless chicken breasts
1/2 c. butter, melted
1/2 c. Dijon mustard
Fresh bread crumbs
1 can French fried onions, crumbled (optional)
Salt & pepper

Cut breasts in half. Mix butter and mustard. Coat chicken liberally. Roll in bread crumbs, lightly seasoned with salt and pepper (and onions, if desired). Place on baking sheet so pieces do not touch. Bake at 325 degrees approximately 50 minutes. Do not overcook. Serves 4-6.
