ROLLED CHICKEN BREASTS | |
2 chicken breasts (boneless and skinless) olive oil 1 cup baby spinach 2 slices Swiss cheese (or blue cheese crumbles) 1/8 tsp. sea salt 1/2 tsp. white pepper 1/2 tsp. garlic powder toothpicks Place chicken breasts in a Ziploc bag. Place on a cutting board on top of a towel, so it doesn't bounce too much when you proceed to flatten the chicken with a mallet, about 1/8-inch thick. Remove chicken from bag, place back on cutting board, drizzle both sides with olive oil, rub in thoroughly. Season with salt, pepper and garlic powder. Take the inside of breast lay it upside. Place spinach and the cheese in the middle of the breast. Start rolling, so it goes over the spinach and cheese, roll tightly, pin shut with a toothpick. You can put them on a hot grill or bake at 425°F for 30 to 40 minutes. Serves 2. Submitted by: D.C. |
