GARBANZO SALAD 
6 oz. drained chick peas
1 oz. Swiss or cheddar cheese, shredded
1 med. tomato, diced
1/4 c. diagonally sliced scallions
1 tbsp. each chopped fresh parsley, olive oil and lemon juice
1/2 tsp. salt
1/2 sm. garlic cloves, mashed
Dash pepper
8 romaine lettuce leaves
1 egg, hard cooked cut into quarters

In medium bowl combine chick peas, cheese, tomato, scallions, and parsley. In a small bowl combine oil, lemon juice, salt, garlic, and pepper. Pour over chick pea mixture and toss to combine.

To serve line serving platter with lettuce leaves, top with chick pea mixture, and garnish with egg quarters.
