GARBANZO MEDLEY 
1/2 c. uncooked brown rice
1 (15 oz.) can garbanzo beans
1 green pepper, chopped
2 onions, sliced
1 eggplant, chopped
3 (15 oz.) cans tomatoes
4 stalks celery, topped
2 carrots, diced
Pepper to taste
3 tbsp. Italian seasoning

Combine all ingredients in pot and bring to a boil. Cover and simmer until rice is tender, about 1 hour. Makes 6 cups.
