COCONUT PIE 
1 cooked pie shell
1 c. sugar
3 tbsp. flour
3 egg yolks
2 c. milk (I use 1 c. evaporated milk, 1 c. water)
2 tsp. vanilla
2 tbsp. butter
1 c. coconut
3 egg whites, pinch salt - beat stiff - add 1/4 c. sugar and 1 tsp. vanilla

Combine sugar, flour, add enough milk to mix well. Add egg yolks and stir well. Add rest of milk. Cook over medium heat until mixture thickens. Add coconut, vanilla and butter. Beat well and pour in baked pie shell. Top with beaten egg whites and coconut. Return to oven at 350 degrees until golden brown.
