YAM AND APPLE CASSEROLE 
4 lg. yams
3 lg. cooking apples
3 tbsp. butter
1 tbsp. cornstarch
1/2 c. firmly packed brown sugar
1/2 c. raisins
1 tbsp. fresh lemon juice
2 c. apple juice, hot
1/2 tsp. ground allspice
1/2 tsp. ground cinnamon

Parboil the yams for 40 minutes; peel and slice 1/3 inch thick. Peel, core and thinly slice apples.

In small saucepan melt butter; add cornstarch and sugar. Mix in lemon juice, hot apple juice, allspice and cinnamon; continue to cook 5 to 6 minutes.

In a shallow greased casserole alternate layers of sliced yams and apples. Sprinkle raisins over top. Pour over the hot apple juice mixture. Cover with foil and bake in a preheated 375 degree oven for 1 hour. Remove foil and continue baking for an additional 30 minutes basting frequently. Serves 10-12.
