ZUCCHINI CAKE 
3 c. grated zucchini (peeled)
3 c. sugar
1 1/2 c. oil
1 1/2 tsp. cinnamon
4 eggs
3 c. flour
2 tsp. baking powder
1 1/2 tsp. salt
1 tsp. baking soda
1 tsp. vanilla

Mix sugar and oil until well blended. Add eggs. Mix dry ingredients together and add to sugar mixture. Add vanilla and zucchini. Mix well and pour in Bundt (or similar) pan that has been sprayed with Pam. Cook until toothpick, inserted in cake, comes out clean.

Frost lightly with Cream Cheese Frosting if desired. (This is a delicious and moist cake. Not for someone on a diet, however.)
