CABBAGE SCRAMBLE | |
1 sm. chopped onion 1/2 green pepper, chopped 1/2 c. celery, chopped 2 c. tomatoes, fresh or canned 3 c. chopped cabbage 1/4-1/2 lb. bacon 1 lb. smoked sausage or kielbasa, thinly sliced about 1/4-1/2" thick 1 tbsp. cornstarch & water if needed Do not over cook. Fry bacon and sausage together; set aside. Pour off the grease. Retaining about 2 tablespoons grease. Add to grease onions, pepper and celery; cook until vegetables are clear and still crisp. Add cabbage. Cook 3-5 minutes. Add tomatoes. Cook 2 minutes. Add bacon and sausage. If recipe is too juicy mix cornstarch with water. Add to ingredients. Cook for 1 minute. Do not over cook! We serve this with baked potatoes. |
