CAJUN FETTUCCINE ALFREDO 
2 tsp. Cajun Magic Seasoning (chicken or fish style)
Fettuccine noodles for 4
1/2 c. green onions (green part only), chopped
1/2 c. mushrooms, chopped
1/4 pimentos, chopped OR roasted red peppers
1 tsp. minced garlic
1/2 c. chick stock OR broth
1 1/2 c. heavy cream

Bring salted water to a boil and cook pasta. Meanwhile, in large skillet, combine stock, onions, garlic, mushrooms and pimentos over high heat until boiling. Add cream and continue on high heat until mixture is reduced by half. Lower heat, add pasta and mix well. Place on warmed serving plates. Pass around grated Parmesan cheese, crushed red peppers and crusty French bread.

Serves 4. Accompany with grilled chicken, shrimp, fish or a side dish.
