AUNT ROSIE'S HAM PIE 
5 eggs
2 c. ham, cubed
1 c. ricotta cheese
2 eggs
1/2 c. Parmesan cheese
1 1/2 tsp. pepper
1 recipe Nut Roll Dough
1/4 c. Parmesan cheese

Make 1 recipe of Nut Roll Dough, use about 1/2 pound dough for each top and bottom crust, for a 9 inch cake pan. Roll dough and gently place in pan that has been sprayed with Pam. Fill with filling, and attach top crust with steam slits, by pressing firmly with palms of hands along edge of pan.

Bake at 350 degrees for 45 to 60 minutes or until knife inserted in center comes out clean. Remove from oven and brush with a mixture of 2 eggs and 1/4 cup Parmesan, which has been beaten well. Cool.

Store wrapped in terry towels for a couple days to absorb moisture and avoid stickiness. For each pie beat 5 eggs, cheeses, and pepper. Stir in ham.

Makes about 8 ham pies.
