ENCHILADAS BY THE LATE GRANDPA

1 lb. ground beef
1 pkg. Chili-O seasoning mix
1 (8 oz.) can tomato sauce
1/4 c. water
1 c. chopped onion
1 c. shredded sharp Cheddar cheese
8 flour tortillas

Brown meat; drain. Stir in seasoning mix, tomato sauce and water; simmer 10 minutes. Remove from heat. Stir onion and 1/2 cup cheese. Spoon 1 tablespoon of filling onto each tortilla. Roll tightly. Place single layer in 10x6 inch baking dish. Top with remaining sauce. Sprinkle with remaining cheese. Bake at 375 degrees for 15 minutes. Makes 4 servings.
