PHIL'S BEST GRILLED BEEF RIBS 
8 pounds beef short ribs
4 tbsp. meat tenderizer (non seasoned)
4 tbsp. Phil's Spice-All (recipe follows)
1 bottle honey barbecue sauce (your choice), divided
10 oz. apple juice

PHIL'S SPICE-ALL:

4 tbsp. Kosher salt
1 tbsp. black pepper
1 tbsp. garlic powder
1 tbsp. onion powder
1/2 tsp. allspice
1 tsp. sage
1 tsp. paprika
1 tsp. thyme

After washing ribs, sprinkle ribs with meat tenderizer and Phil's Spice-All on one side. After 10 minutes turn meat over and repeat. Allow ribs to reach room temperature (about 40 minutes).

Cook meat on a grill with hickory wood at 225-275°F for about 1 1/2 hours or until ribs reach 160°F.

When ribs reach 160°F, put ribs in a foil pan and put half the BBQ sauce and the apple juice in the pan. Increase heat on grill to 350°F and continue cooking ribs in the pan on the grill for another 45 minutes or until ribs reach 185°F.

Remove ribs from grill and allow to rest in pan covered for 10 minutes. Then remove from pan and serve with remaining sauce.
