CAJUN CATFISH 
4 tbsp. butter
2 tsp. paprika
1/2 tsp. cayenne pepper
1/4 tsp. black pepper
1/2 tsp. dried thyme
1/2 tsp. dried oregano
1/2 tsp. salt
1 3/4 lb. catfish fillets

Heat broiler. Melt butter and combine with spices and salt. Coat fillets with mixture. Broil until opaque throughout, about 5 minutes per side.
