SOFT GINGER COOKIES 
1 1/2 c. sugar
1 1/2 c. butter
3 eggs
1 1/2 c. dark molasses
7 1/2 c. flour
1 1/2 tsp. ginger
1 1/2 tsp. nutmeg
Pinch of salt
1 1/2 tsp. baking soda
1 1/2 c. boiling water

Cream sugar and butter, add eggs and molasses. Combine flour, spices, salt, add alternately with baking soda dissolved in hot water, to egg mixture. Drop on prepared cookie sheet and bake at 350 degrees for 12 to 15 minutes.
