CHICKEN WITH GINGER AND ONION 
4 chicken breasts
8 sprig onions
Oil for frying
3 tsp. crushed ginger
1 tsp. salt
4 tsp. sherry
2 1/2 tbsp. soy sauce
1/2 tsp. sugar
1/2 tsp. sesame oil

Remove the chicken meat from the bones and cut into cubes. Chop the onions. Heat oil in large fry pan. Saute the onion, ginger, and salt for 1 minute. Add the chicken and mix well. Cook for 2 minutes. Add the sherry, soy sauce, sugar, and sesame oil. Cover and cook for 5-10 minutes or until chicken is tender. Serves 4.
