GINGER CHICKEN 
3 lb. chicken
1 tsp. salt
1 piece of crushed ginger

SAUCE:

4 tsp. peanut oil
4 tsp. salt
1 tbsp. ginger (slivered or finely diced)
2 tbsp. green onion, chopped

Immerse chicken in pot of boiling water. Add salt and 1 piece of ginger. Leave chicken in hot water for about 45 minutes until chicken is tender enough to poke a chopstick through. After chicken is done, wash in cool water. Chop into serving pieces. Chill in refrigerator. Blend in a blender; all ingredients for the sauce. Pour over chilled chicken.
