GREEN TOMATO PIE 
1 c. sugar
Flour, sifted
4-5 green tomatoes, sliced
1/4 tsp. salt
1 tbsp. butter
2 tbsp. vinegar
1 1/2 tsp. lemon extract

Mix vinegar and lemon extract. Soak tomatoes in this for a few minutes. Sprinkle bottom of pie crust with 1/2 cup sugar. Dredge with flour. Pour in sliced tomatoes. Sprinkle salt over; dot with butter. Dredge with flour. Add other 1/2 sugar. Bake in moderate oven.
