CREAM CHEESE PASTRY WITH JAM 
1 3/4 c. flour
1 c. butter
1/2 lb. cream cheese or farmer cheese (rubbed through strainer)
Dash salt
1/2 tsp. grated lemon rind
1 c. jam
1 egg white
1 tbsp. confectioners' sugar

1. Work first 5 ingredients into dough. Cool for 30 minutes.

2. Roll 1/4" thick.

3. Cut into 2 1/2" to 3" squares.

4. Put 1/2 teaspoon jam in center of each square.

5. Brush border with egg white.

6. Fold into triangles and press border together.

7. Brush top with egg white.

8. Bake at 350 degrees for 20 minutes.

9. Sprinkle with confectioners sugar.
