RICE RING 
4 tbsp. butter
1 green pepper, cut into sm. pieces
2 c. canned or fresh tomatoes
1 sm. clove garlic, diced fine
1 c. mushrooms, sliced
1 tbsp. salt
1/4 tsp. pepper
1 lb. rice, washed & drained thoroughly
1 c. hot water

Melt butter in heavy saucepan. Add green pepper, garlic, mushrooms, tomatoes, salt and pepper. Cook together several minutes. Add washed rice and 1 cup of hot water. Stir until well mixed. Do not uncover while cooking and do not stir. Cook about 35-45 minutes. Pour into ring mold and let sit for several minutes, turn out onto platter.
