SWISS CHEESE PIE (QUICHE LORRAINE) | |
9 inch unbaked pie shell 8 slices bacon 1/2 lb. Swiss cheese, shredded 1 tbsp. flour 1/2 tsp. salt 1 1/2 c. milk 3 eggs Bake pie shell in a 450 degree oven 7 minutes only. Remove from oven and reduce heat to 325 degrees. Fry bacon until crisp; drain and crumble. Save 2 tablespoons bacon for the top. Put remaining bacon in crust. Add shredded Swiss cheese. Combine remaining ingredients in electric blender or with mixer and pour over cheese. Sprinkle extra bacon over top. Bake in 325 degree oven 35 to 40 minutes until almost set in center. Let cool 25 to 30 minutes before serving. Can be cooked earlier in day or night before and reheated 15 minutes at 300 degrees to serve. Don't be afraid of this one. It is very simple and a frozen pie shell may be used. |
