MARSALA-BAKED CHICKEN 
1/4 c. fine dry bread crumbs
1/4 c. grated Parmesan or Romano cheese
2 tbsp. fresh minced parsley
1/4 tsp. paprika
8 chicken thighs (about 2 1/2 lbs.), skinned
Vegetable cooking spray
2 tbsp. butter
1/3 c. Marsala wine

Combine first 4 ingredients stirring well, dredge chicken in bread crumb mixture. Arrange chicken in shallow baking pan coated with cooking spray. Dot with butter; cover and bake for 30 minutes. Pour wine over chicken. Cover and bake 15 minutes; uncover and bake 15 minutes.
