CREAM OF TOMATO SOUP | |
1 qt. tomato juice 1 tsp. salt 1/2 tsp. white pepper 2 tbsp. sugar 1/2 med. onion, sliced thin 1/2 c. butter 1/4 c. plus 1 tbsp. flour 1 qt. cold milk Heat juice and onion to boiling for 10 minutes and remove the onion. Melt butter and add flour to butter. Add this mixture to juice, cook till it thickens. Add salt, pepper and sugar, and remove from heat. Beat in cold mild with whisk. Return to heat and heat well, but do not boil. |
