VEAL PARMIGIANO
4 tbsp. butter
2 c. corn flake crumbs, can crush with rolling pin - place flakes in zip-lock bag
1/3 to 1/2 c. Parmesan cheese
1 lb. veal cutlets (or 6 nice sized pieces), sliced thin
1 slightly beaten egg
1 (8 oz.) can tomato sauce
1/2 tsp. dried oregano
1/2 tsp. sugar
Dash of onion salt
Grated Mozzarella cheese

Melt butter in 9 x 13 inch baking dish. Combine corn flake crumbs, Parmesan cheese, dash of salt, and pepper. Dip veal in egg, then in crumb mixture. Place in baking dish. Bake at 400 degrees for about 7 to 10 minutes on each side (depending upon thickness of veal). Meanwhile, combine tomato sauce, oregano, sugar, and onion salt. Heat thoroughly to boiling point, then simmer, stirring frequently, until meat is done. Spoon sauce over meat, then sprinkle with cheese. Return to oven to melt cheese.
