RICE CAKE (Rizskot) 
1 c. rice
1 qt. milk
3/4 c. butter
1 orange rind
1 c. sugar
1/2 c. white raisins
5 eggs

Wash rice and put in a 4 quart pot. Add enough water to cover. Bring to a boil and drain. Add milk and cook until rice is done. Now cream butter and sugar well. Beat yolks until thick and lemon color. Add these to warm rice with rind and raisins, blend well, fold in stiffly beaten egg whites.

Put into buttered 10 inch angel food tube pan, dusted with cracker crumbs. Bake at 350 degrees for 50 minutes. Cool 20 minutes. Loosen with knife. Invert. Sprinkle with powdered sugar.
