ST. PATRICK'S MOLDED SALAD 
1 pkg. lemon flavored gelatin
1 c. boiling water
1 (6 oz.) pkg. cream cheese
1 sm. can crushed pineapple
1 tsp. sugar
1 tsp. vanilla
Green food coloring
1/2 c. chopped pecans
1 (7 oz.) bottle lemon-lime carbonated beverage
Salad greens
Salad dressing

Dissolve gelatin in boiling water. Cool. Whip cheese until fluffy, then gradually beat in cooled, but not thickened, gelatin. Stir in pineapple, sugar, vanilla, and food coloring, using just enough to tint the mixture a pleasant green color. Finally stir in the soft drink and pour into a mold to chill. Just before the mixture begins to set, stir gently to keep nuts from coming to the top. Chill until firm. Unmold and garnish with salad greens. Serve with any desired dressing.
