1 sm. potato
butter, size of walnut
1/2 tsp. vanilla
Peanut butter
1 lb. box powdered sugar

Boil potato; mash while hot. Add butter and vanilla, mix until smooth. Add sugar a little at a time, mixing well. Place on waxed paper and roll out thin. Spread with peanut butter. Roll up and cut into slices. Looks like pinwheels.
