TURKEY-CHICKEN QUICK CHANGE
SALAD
 
1 (10 or 12 oz.) can chunk turkey or chunk chicken, broken up
1 1/2 - 2 tbsp. mayonnaise (lite if calorie counting)
1 stalk celery, diced
1 carrot, grated
2 scallions, diced (opt.)

Any of the following ingredients will make a nice addition; diced walnuts, raisins, small white grapes or small flowerettes of broccoli or cauliflower.

Drain canned meat; add celery, carrots, scallions and any other optional ingredients. Mix thoroughly, fold in mayonnaise. Season to taste.

Make into 3 to 4 sandwiches or put on lettuce lined plate for 4 to 6 lite nutritious salads, or approximately 40 to 50 hors d'oeuvres.
