SHRIMP FETTUCINI CASSEROLE 
1 lb. Velveeta cheese
1 1/2 c. butter
3 onions, chopped
2 tsp. jalapeno relish
2 bell peppers, chopped
1 pt. half & half
1 stalk celery, chopped
1-2 lbs. shrimp or crayfish
2 cloves garlic
Salt, red and black pepper
1/4 c. flour

Melt butter in pot; add onions, peppers, celery and garlic and cook to soften. Add seafood, cook 15 minutes. Put in 1/4 cup flour to thicken. Cook for 5 minutes, stir often. Add chopped Velveeta and everything else, cook for 15 more minutes. Boil noodles, mix with sauce. Pour into greased casserole dish and sprinkle with Parmesan cheese on top. Bake in oven at 350 degrees for 15 minutes.
