TAMALE BITES 
2 c. corn bread, crumbled
1/2 tsp. salt
1 (8 oz.) can tomato sauce
2 oz. Monterey Jack cheese, grated
1 (10 oz.) can mild enchilada sauce
1 1/2 lbs. ground beef

Combine corn bread, 1/2 cup enchilada sauce and salt. Add beef and mix well. Shape into 1 inch balls. Place in shallow baking pan and bake, uncovered at 350 degrees for 18 to 20 minutes. Then heat together tomato sauce and remaining enchilada sauce. Pour sauce over meat and top with cheese. Return to oven until cheese melts. Makes 90 balls.
