RANGER COOKIES 
1 c. shortening
1 c. packed brown sugar
1 c. granulated sugar
1 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. semi-sweet chocolate chips
1 c. chopped nuts
2 eggs
1 tsp. vanilla
2 c. whole wheat flour
1/2 tsp. baking powder
2 c. whole wheat cereal

Preheat oven to 375 degrees. Mix sugars, shortening, vanilla and eggs. Stir in remaining ingredients; dough will be stiff. Shape dough by rounded teaspoonsful into balls. Place about 2 inches apart on ungreased cookie sheet. Bake until set, but not hard, 8 to 10 minutes. Cool 3 minutes, remove from cookie sheet. About 6 dozen cookies.

COCONUT RANGERS:

Substitute 1 cup flaked coconut for the chocolate chips.
