BANANA WALNUT RICE MUFFINS 
2 c. rice flour or 1 1/2 c. oat flour & 1/2 c. rolled oats
3 tsp. baking powder
1 tsp. sea salt
1/2 c. chopped walnuts or almonds
3 tbsp. milk or juice
2 eggs
1 c. mashed bananas
2 tbsp. oil
1 tsp. vanilla
1 tsp. nutmeg

Preheat oven to 350 degrees. Combine flour, baking powder, salt and nuts in a mixing bowl. Stir in milk, eggs and bananas. Add oil, vanilla and nutmeg. Pour into well buttered muffin tin and bake until springy. Approximately 20 (4 minutes). Makes 1 dozen.
