DANISH AEBLESKIVER OR BREAKFAST
DOUGHNUTS
 
2 c. buttermilk, or milk with 1 tsp. vinegar
2 c. flour
3 eggs, separated
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
2 tsp. sugar
Applesauce, about 1 c. (jam or blueberries)
Powdered sugar and sifter

Beat egg whites until stiff, set aside. Beat egg yolks, sugar, salt and milk. Then add flour, soda, and powder. Then fold in egg whites.

Place a small amount of shortening or vegetable oil in each cup of aebleskiver pan. When hot, fill each cup 2/3 full of dough, and add a teaspoon of applesauce. Then cover with more dough.

Cook until bubbly, turn or roll carefully with a fork. Finish baking.

Serve with jam, syrup and top with a sprinkling of powdered sugar.

Aebleskiver pans can be purchased at most gourmet cookware shops.
