WHEAT GERM MUFFINS 
1 c. wheat germ
1 c. milk
1 egg, beaten
2 tbsp. oil
1 c. whole wheat flour or 1/2 white, 1/2 whole wheat
4 tsp. baking powder
3/4 tsp. salt
4 tbsp. brown sugar or honey

Combine wheat germ and milk. Add beaten egg and oil. Stir together flour, baking powder, salt and brown sugar. (If honey is used, add to wheat germ mixture). Add dry ingredients to wheat germ mixture. Stir just enough to moisten dry ingredients. Fill muffin pans 2/3 full. Bake at 400 degrees for 20-25 minutes. Serve hot. Make 12 muffins.
