SWEDISH OATMEAL COOKIES 
1 1/2 c. old fashion oats
1 stick real butter
1 tsp. baking powder
1 1/2 tsp. plain flour
1 egg
2/3 c. sugar

Melt butter and pour over oats. Stir well. Sprinkle baking powder and flour over oats. Beat egg and sugar together until fluffy. Add to oats, stir well. Place about 1/2 teaspoon on well greased and floured cookie sheet 1 1/2 inches apart. Cook 10-15 minutes at 325 degrees. Cool well.

FILLING:

1 c. powdered sugar
1 1/2 tsp. vanilla
1 egg yolk
1 stick real butter

Mix above together and spread on cookie. Place another cookie on top.

TIPS: Cover cookie sheet with aluminum foil, grease with paper towel with few drops of oil on it, then flour. (I fix 2 or 3 at a time). When cookies are done, slip off foil to a flat surface to cool. Let cool completely. The cookies spread about double while baking, so measure dough amount by the size you want the finished cookie. 1/2 measured teaspoon works well. If cookie run together, cut between when you take from the oven. Let cookies cool completely before filling.
