FRITO PIE CASSEROLE 
1 to 1 1/2 lb. ground beef
1 pkg. taco seasoning
1 can enchilada sauce
1 small onion, chopped
1 small pkg. shredded cheese
1 bag Frito Scoops chips
a few jalapeno peppers
1 can sliced mushrooms
1 can sliced black olives
chives

Brown ground beef; drain. Add taco seasoning (following instructions on package). Add mushrooms and onion. Simmer.

Prepare 8 x 10 casserole dish (spray with Pam). Lay Frito chips on bottom; pour hamburger mixture over chips evenly. Pour enchilada sauce evenly over hamburger. Sprinkle Cheddar cheese over chives, olives and jalapeno peppers.

Bake at 400°F until cheese is melted. Top with sour cream and salsa.
