ZESTY BLACK BEANS | |
1 lb. black beans, washed, soaked overnight 6 c. chicken stock 1 lg. onion, chopped finely 1 tomato, chopped 1 green pepper, chopped finely 1/2 c. cilantro (fresh), chopped 1 tbsp. balsamic or red wine vinegar 1 tbsp. sugar 2 tsp. soy sauce 1 1/2 tsp. oregano 2 garlic cloves, minced 1/2 ham shank (optional) Place beans which have been soaked in a large heavy pot. Cover with water and simmer for 4 hours. As liquid is reduced add chicken stock. Add remaining ingredients, stir thoroughly and continue simmering for 2 more hours, covered. Add more stock as needed to keep beans covered. Season with salt and serve with sour cream and cilantro sprigs. 6 to 8 servings. |
