BLACK AND WHITE BEAN SALAD 
1 (15.8 oz.) can Great Northern beans, rinsed & drained
1 (15 oz.) can black beans, rinsed & drained
1 1/4 c. tomatoes, peeled, seeded & chopped
3/4 c. sweet red pepper, diced
3/4 c. sweet yellow pepper, diced
3/4 c. green onions, thinly sliced
1/2 c. commercial salsa
1/4 c. red wine vinegar
2 tbsp. fresh cilantro, chopped
1/4 tsp. salt
1/8 tsp. pepper, freshly ground
10 c. Romaine lettuce, finely shredded (about 1 head)

Combine beans and chopped tomato in large bowl, stirring gently. Add red and yellow peppers and green onions, stir gently to combine; set bean mixture aside.

Combine salsa, vinegar, cilantro, salt and pepper in small bowl. Stir with a wire whisk until well blended. Pour over bean mixture and toss gently. Line a large serving bowl with shredded lettuce, top with bean mixture.

Makes 10 servings.
