RICE PUDDING 
1 c. brown rice
4 c. water
1/2 tsp. sea salt
1/4 c. tahini
1/2 c. raisins
2 eggs, lightly beaten or 1/2 c. soy milk
2 tbsp. maple syrup
1/2 tsp. vanilla
1/4 tsp. cinnamon
2 pinches nutmeg

Wash rice thoroughly in cold water. Bring to a boil with a pinch of salt and 3 1/2 cups of the water and allow to boil for a few minutes; then reduce heat and simmer, covered, for 40 minutes. Dilute tahini with remaining 1/2 cup water, adding a little at a time and mixing until creamy.

In a covered baking dish combine rice, tahini, and all other ingredients except nutmeg, mixing well. Sprinkle nutmeg on top and bake at 350 degrees for 20 minutes, removing cover 5 minutes before done. Serves 6.
