8 oz. cream cheese
Grated lemon rind
Lemon juice, until creamy
Confectioners' sugar, to taste

Add lemon juice and lemon rind to softened cream cheese and beat until really smooth and creamy. Add just enough confectioners' sugar to make it as sweet as you like, no more. Great on Zucchini or carrot cakes!
