SUGAR FREE APPLE PIE 
4 c. peeled & sliced apples (sweet varieties best)
1/2 c. frozen apple juice (undiluted)
1 1/2 to 2 tsp. tapioca, cornstarch or flour
1/2 tsp. lemon juice (opt.)
1/2 to 1 tsp. cinnamon, nutmeg or apple pie spice
2 pie crusts to fit 8 or 9 inch pan

Mix all ingredients, stir until apples are well coated. Taste 1 piece to check spices. Put in crust. Bake at 425 degrees for 40 to 45 minutes or until golden brown. Serve warm or cold. (For diabetics the exchange is 1 1/2 fruit, 1 bread, 2 fats. The calorie count is 220.)
