LO-CAL POTATO SALAD 
4 lbs. potatoes, cut in pieces
2 tbsp. oil
2 tbsp. vinegar
1 c. lowfat mayonnaise
1 c. plain yogurt
2 tbsp. mustard
Minced red onion, if desired

Cook potatoes. Mix remaining ingredients and fold into potatoes. Place red onion rings on top.
