PINEAPPLE ZUCCHINI BREAD | |
3 eggs, well beaten 1 1/2 c. sugar 1 c. cooking oil 2 c. grated zucchini 1 c. chopped nuts 1 c. raisins 8 1/2 oz. can crushed pineapple, drained 3 c. flour 1/4 tsp. salt 2 tsp. baking soda 1/2 tsp. baking powder 1 tsp. nutmeg 2 tsp. cinnamon 2 tsp. vanilla Cream eggs, sugar and oil. Add zucchini, nuts, raisins and pineapple. Add all dry ingredients, mix well. Pour into 2 loaf pans. Bake at 350 degrees for 1 hour or until done. |
