SKINNY BEANS AND RICE 
1 pkg. dried beans (I use kidney beans or black beans)
4 bouillon cubes, chicken or beef
1 c. diced onion
2 cloves garlic, chopped finely
1/4 tsp. black pepper
1 c. chopped green pepper
1 bay leaf
Brown rice, cooked

Wash beans. Combine beans, bouillon cubes, onion, garlic and pepper in kettle. Cover with water. Cook until tender. Time depends upon type of bean used. When tender add green pepper and bay leaf. Cook over medium heat until peppers are tender but still crisp. Serve over brown rice.
