BANANA CREAM PIE 
3/4 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
3 c. milk
3 egg yolks, slightly beaten
2 tbsp. butter
2 tsp. vanilla
2-3 bananas
Whipped cream

Crust:

1 c. flour
1/2 tsp. salt
1/3 c. shortening
3-4 tbsp. water

Combine ingredients and make pie crust. Bake crust until light brown.

In medium saucepan, combine sugar, cornstarch, and salt. Stir in milk, blend until smooth. Cook over medium heat until mixture boils and thickens, stirring constantly. Boil 2 minutes. Remove from heat. Blend a small amount of hot mixture into yolks. Return to saucepan blending well. Cook until mixture just begins to bubble, stirring constantly. Remove from heat. Stir in butter and vanilla. Cool filling. Slice bananas into pie shell. Pour filling over bananas. Refrigerate until set. Serve with whipped cream.
